Thai Masaman beef recipe

Beef is considered by the Thais as the meat that has a very rich flavor. You will not notice that most of the local Thai cuisines use beef as its main ingredient including curry dishes. If you want to have a taste of Thai beef curry without going to Thai restaurants, you might want to check out this recipe so you could make one right in your home.

Recipe for Thai Masaman beef

Here are the ingredients that you will need:

  • 5 cups of coconut milk
  • 1000 grams or 1 kg of beef brisket (cut into cubes)
  • 1 teaspoon of demerara sugar
  • 1 pineapple, peeled and sliced
  • 3 kaffir lime leaves
  • 4 dried chilies
  • 3 shallots
  • 3 cloves of garlic
  • 2 tablespoons of coriander stalk and roots, chopped
  • 1 tablespoon of coriander seeds
  • 2 green cardamoms
  • 1 teaspoon of cumin seeds
  • 2 cloves
  • 2 tablespoons of freshly squeezed lemon juice
  • 2 tablespoons of olive or peanut oil
  • Lemon grass
  • Salt
  • Pepper

Here are the steps in creating a delectable Thai masaman beef:

  1. Pre-heat the oven to 350 degrees.
  2. On a baking tray, put the ingredients needed for roasting and put it in the oven for at least 10 minutes.
  3. If you do not have an oven, you can put the ingredients in the deep pan and wait until it turns brown. Stir the mixture occasionally with a wooden spoon. Add the garlic and the onion. Transfer the mixture in a food processor. Afterwards, you may start adding the 3 tablespoons of coconut milk. Blend it until you achieve a paste-like consistency.
  4. Once you already have a curry paste, put it in a deep saucepan.
  5. Let it boil and continuously stir for at least 4 or 5 minutes.
  6. Put the beef and stir. Make sure that all the beef cubes are covered with the curry paste.
  7. Cover the pan and wait for 3 minutes.
  8. Take the cover and stir it again.
  9. Put the remaining coconut milk, kaffir lime leaves, demerara sugar, salt and pepper to taste.
  10. Reduce the heat and wait until it boils.
  11. Let the curry simmer and take the cover.
  12. Wait for at least an hour and allow the curry sauce to thicken.
  13. Adjust the seasoning depending on your preferences. You may then add the pineapple and stir occasionally for 10 up to 15 minutes.
  14. You can also put it in the oven and bake it for 1 hour under 250 degrees.
  15. Best served when hot.

The Thai Masaman beef is best eaten with plain cooked rice or salad and cooked vegetables.
